Preheat the oven to 200 °C and line a baking sheet with parchment paper. Wash the radishes, remove the greens and roots, and halve the radishes. Season with salt and pepper, add olive oil, and mix everything well.
Spread the radishes evenly on the baking sheet and roast in the preheated oven for about 35 minutes until soft and lightly browned.
Once the radishes are done, melt the butter in a pan and heat until it foams vigorously and turns lightly brown. Add the finely chopped garlic and roasted radishes to the pan and sauté for a few minutes, stirring occasionally.
