Preheat the oven to 200 °C top/bottom heat. In a bowl, stir the quark smooth with 50 g icing sugar, vanilla pudding powder, and the egg.

Roll out the fresh puff pastry on the work surface and spread the quark mixture evenly over it. Leave some space at the edges.

Sprinkle the frozen forest berries evenly over the quark mixture. Carefully roll up the dough from the long side into a firm roll.

Chef's tip

Serve the quark braid best still lukewarm with a scoop of vanilla ice cream or a dollop of freshly whipped cream.
