Cook the carrots until soft, then blend into a fine puree.

Thoroughly mix the carrot puree with all remaining ingredients in a bowl.

Spread the mixture onto a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C for approx. 20-30 minutes, until the granola is golden brown and crispy. Turn occasionally.

Chef's tip

Stored in an airtight container, the granola will keep for several days and remain nicely crispy.
