Preparation method
Preheat the oven to 180 degrees Celsius (top/bottom heat). Line a baking tray with baking paper.
Roll out the puff pastry on a floured surface or directly on the baking paper into two equally sized rectangles (approx. 20x30 cm). Whisk the egg in a small bowl and mix with the picked thyme leaves and freshly ground pepper.
Generously brush one pastry rectangle with the egg mixture and sprinkle evenly with the grated cheddar. Place the second pastry rectangle precisely on top. Lightly press down with a rolling pin or your hands so that the cheese adheres well to the pastry.
Chef's tip
For a vegetarian version, you can simply omit the bacon and instead finely chop dried tomatoes or olives and add them to the filling.
