- 1 clove Garlic
- 40 g Yellow onion
- 100 g White cabbage
- 220 g Canned chickpeas
- 30 ml Extra virgin olive oil
- 80 g Oat flour
- 4 g Table salt
- 1 pinch Ground black pepper

First, prepare the vegetable mixture. Place all ingredients except the olive oil in a food processor or electric chopper and grind finely.

Then, heat 2 tablespoons of olive oil in a pan over medium heat. Form flat schnitzels or patties from the vegetable mixture with your hands and fry them in the hot pan for about 2-3 minutes until golden brown on each side.

Arrange the finished vegetarian vegetable schnitzels on plates and serve immediately.
Chef's tip
Serve the vegetable schnitzels with a dollop of sour cream and fresh chives for an extra fresh touch.
