Ingredients

  • 200 g fresh spinach
  • 200 g tomatoes
  • 80 g walnut kernels
  • 4 figs
  • 150 g plant-based feta
  • 150 g Kalamata olives
  • 100 ml olive oil
  • 80 ml light balsamic vinegar
  • Salt to taste
  • Pepper to taste

Preparation

    Wash the spinach and drain well. Break walnuts into small pieces. Wash and quarter the tomatoes. Dice the plant-based feta. Wash and quarter the figs.

    Arrange the leafy salad on four plates, then add tomatoes, figs, walnuts, olives, and plant-based feta. Drizzle with olive oil and light balsamic vinegar, and season with salt and pepper to taste.
