- 200 g fresh spinach
- 200 g tomatoes
- 80 g walnut kernels
- 4 figs
- 150 g plant-based feta
- 150 g Kalamata olives
- 100 ml olive oil
- 80 ml light balsamic vinegar
- Salt to taste
- Pepper to taste

Preparation
- 1Wash the spinach and drain well. Break walnuts into small pieces. Wash and quarter the tomatoes. Dice the plant-based feta. Wash and quarter the figs.
- 2Arrange the leafy salad on four plates, then add tomatoes, figs, walnuts, olives, and plant-based feta. Drizzle with olive oil and light balsamic vinegar, and season with salt and pepper to taste.
