Preparation method

Sift the buckwheat flour and almond flour onto a work surface. Form a well in the center and add the egg yolk, honey, and cold butter cut into pieces. Add cinnamon and a pinch of salt.

Quickly mix all ingredients and knead with your hands to form a smooth dough. Form the dough into a ball, wrap it in cling film, and let it rest in the refrigerator for about 30 minutes.

Meanwhile, preheat the oven to 160 °C (top/bottom heat). Line a baking sheet with baking paper.

Chef's tip

For a more intense aroma, you can dust the cookies with some powdered sugar after baking or dip them halfway in dark chocolate.
