Preheat the oven to 180 °C top/bottom heat and line a baking sheet with baking paper.

In a large bowl, beat the soft butter with the brown cane sugar until the mixture is light and fluffy (approx. 3-5 minutes).

Add the eggs one by one, beating well after each addition. Then stir in the vanilla extract.
Chef's tip
For particularly soft cookies (chewy style), keep the baking time rather short. They will firm up further as they cool.
