Preparation method
First, finely grate the cheddar and Parmesan. Peel the garlic cloves and finely grate or press them as well.
In a small saucepan, bring the water and butter to a boil. As soon as the mixture boils, reduce the heat and add the wholemeal spelt flour all at once. Stir with a wooden spoon until the dough forms a ball and detaches from the bottom of the pot (approx. 10–13 minutes). Remove the pot from the heat and stir in the grated cheddar, Parmesan, garlic, salt, and pepper. Transfer the dough to a bowl and let it cool for at least 30 minutes.
Preheat the oven to 180–185 °C top/bottom heat. Line a baking sheet with baking paper.
