Ingredients

  • 70 g Cheddar
  • 50 g Parmesan
  • 3 cloves Garlic
  • 40 g unsalted butter
  • 130 g whole spelt flour
  • 1 egg (size M)
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 200 ml water

Preparation

    First, finely grate the cheddar and parmesan. Peel the garlic cloves and finely grate or press them as well.

    In a small pot, bring the water and butter to a boil. Once the mixture boils, reduce the heat and add the whole spelt flour all at once. Stir with a wooden spoon until the dough forms a ball and detaches from the bottom of the pot (approx. 10–13 minutes). Remove the pot from the heat and stir in the grated cheddar, parmesan, garlic, as well as salt and pepper. Transfer the dough to a bowl and let it cool for at least 30 minutes.

    Preheat the oven to 180–185 °C top/bottom heat. Line a baking sheet with baking paper.

    Stir the egg into the cooled dough until a homogeneous mixture is formed. Form small balls from the dough (approx. 27–30 g per piece) and place them on the baking sheet with some space between them. Bake in the preheated oven for approx. 23–25 minutes until golden brown.

    Remove the cheese puffs from the oven and let them cool completely on the baking sheet for at least 60 minutes to achieve their crispy texture. Serve cold.
