Preparation of the Dressing
Wash and dry the lime thoroughly. Grate the zest with a fine grater, then halve the lime and squeeze the juice from one half. In a small bowl, whisk together the lime juice, zest, honey, vanilla extract, and 3–4 finely chopped mint leaves to form a smooth dressing.
Prepare Fruit
Cut the mango along the pit on both sides, peel, and cut the flesh into even cubes. Peel the kiwi, halve it, and slice it. Wash strawberries and blueberries. Quarter or halve the strawberries depending on their size.
Mix and Serve
Place the prepared fruit in a bowl, pour the lime dressing over it, and gently mix. Let the salad chill in the refrigerator for about 15 minutes for the flavors to develop.
Chef's tip
For a vegan option, you can replace the Greek yogurt with a plant-based alternative made from coconut or soy, and swap the honey for maple syrup.
