Preparation method

Prepare the pangrattato

Heat 1 tbsp olive oil in a pan. Toast the breadcrumbs together with some fine lemon zest and a pinch of salt over medium heat for 3–4 minutes, stirring constantly, until golden brown and crispy. Remove from the pan and set aside.

Cook the pasta & vegetables

Bring a large pot of plenty of salted water to a boil. Cook the pasta according to package instructions until al dente. During the last 3 minutes of cooking time, add the chopped broccoli florets directly to the pasta in the boiling water and cook together.

Before draining, scoop out approx. 100 ml of starchy pasta water and set aside. Drain the pasta and broccoli.

Chef's tip

Pangrattato – the 'poor man's truffle': In southern Italy, crisply toasted breadcrumbs are traditionally sprinkled over pasta instead of expensive cheese. Refined with lemon zest, it adds a fantastic crunch!

Pasta water trick: The starchy cooking water combines olive oil and cheese into a wonderfully creamy sauce without any cream.
