Preparation & Making the Kofta

Rinse the chickpeas in a colander and drain well. Peel and finely chop the onion, garlic, and ginger. Wash the fresh coriander, shake dry, and finely chop.

Place the drained chickpeas in a bowl and coarsely mash them with a fork or potato masher. Add half of the chopped garlic, half of the ginger, half of the fresh coriander, as well as 1 tsp garam masala, 1/2 tsp cumin, and 1/2 tsp salt. Mix in the flour until a shapeable mixture forms.

Using lightly oiled hands, shape the chickpea mixture into about 12 walnut-sized balls (koftas). Heat 2 tbsp vegetable oil in a large pan and fry the balls over medium heat for about 6 to 8 minutes until golden brown and crispy all over. Then carefully remove and set aside on a plate.

Chef's tip

Tip for extra crispiness: Alternatively, the koftas can also be baked in a preheated oven at 200 °C top/bottom heat for approx. 20 minutes.

Storage: The fried koftas are ideal to prepare the day before and add to the fresh curry sauce just before serving.
