Preparation method
Bulgur & Preparation
Bring the vegetable stock to a boil in a small pot. Stir in the bulgur, remove from the heat, cover, and let soak for about 15 minutes until all the liquid has been absorbed. Then fluff with a fork and allow to cool until lukewarm.
Peel the red onion, halve it, and cut into thin half rings. Wash the parsley and mint, shake dry, pick the leaves, and roughly chop them. Toast the walnut kernels in a dry pan over medium heat for 2–3 minutes until fragrant, then roughly chop.
Caramelising Figs & Mixing the Dressing
Gently wash the fresh figs, pat dry, and cut into quarters. Heat 1 tbsp of olive oil in a non-stick pan, stir in 1 tbsp of honey, and gently sauté the fig quarters over medium heat for about 2–3 minutes until lightly caramelised and tender. Carefully remove from the pan and set aside.
Chef's tip
For an extra tart and fruity note, you can round off the dressing with 1 tbsp of Nar Ekşisi (Turkish pomegranate syrup).
The bulgur salad also tastes great cold the next day as an office lunch – it is best to add the figs just before eating.
