- 60 g almond flour
- 140 g fine oats
- 40 g unsalted pistachios
- 80 g natural cashew nuts
- 40 g organic coconut oil
- 60 g organic agave syrup
- 60 g organic white almond butter
- 200 g white chocolate couverture
- 75 g fresh baby spinach
- 50 g dark chocolate 70%
- 1 tbsp red jam
Finely grind the nuts (pistachios and cashews). In a bowl, mix the almond flour, oats, and ground nuts. Add the melted coconut oil, almond butter, and agave syrup. Knead everything into a uniform dough. It's best to press the dough directly into bar molds or form even bars by hand. Let the bars firm up in the refrigerator for at least one hour (or faster in the freezer).
Finely purée the spinach with a little water. Melt the white chocolate in a bain-marie. Color half of the white chocolate green with the spinach purée. For the 'Frankenstein' bars, dip the bars into the green chocolate. After drying, draw hair with melted dark chocolate and place almonds as eyes. Fill the remaining white chocolate into a piping bag and decorate the 'Mummy' bars with stripes. Pipe small red eyes with jam.
Chef's tip
For a vegan version, make sure the chocolate does not contain any dairy ingredients. Instead of agave syrup, maple syrup can also be used.
