Preheat the oven to 190 °C top/bottom heat (170 °C fan). Thoroughly grease a loaf tin or baking dish with a little unsalted butter.
Peel one-third of the potatoes (approx. 350 g), boil in salted water until soft, drain, and mash finely while still warm using a potato masher.
Peel the remaining two-thirds of the potatoes (approx. 650 g) and grate on a fine grater. Place the grated potatoes into a clean kitchen towel and squeeze firmly to remove excess water.
Chef's tip
Classic leftover tip: The next day, the Potthucke tastes even better when the cold slices are fried on both sides in a pan with a little clarified butter until golden brown and crispy.
Texture: Squeezing out the raw grated potatoes is crucial so that the Potthucke holds together well in the oven, becoming juicy on the inside and nicely crispy on the outside.
