Preheat the oven to 200 °C top/bottom heat (or 180 °C fan). Wash, core and deseed the red bell peppers and pointed peppers, then cut them into approx. 2 cm wide strips or rings. Peel the red onions and cut into fine wedges. Peel and finely chop the garlic cloves. Wash the cherry tomatoes and cut them in half.

Place all the prepared vegetables (pepper strips, onion wedges, garlic, and cherry tomatoes) into a large bowl. Mix thoroughly with 2 tbsp of olive oil, dried oregano, chili flakes, table salt, and freshly ground black pepper.

Layering & Baking

Spread the marinated vegetables evenly in a large baking dish. Pat the halloumi cheese dry, cut into approx. 1 cm thick slices, and arrange between and on top of the vegetables. Drizzle with the remaining 1 tbsp of olive oil.

Chef's tip

Halloumi does not melt in the oven; instead, it retains its firm texture and develops a wonderfully savoury crust. Do not slice it too thinly so that it remains juicy inside.

For extra freshness, you can drizzle a few splashes of fresh lemon juice over the warm roasted vegetables just before serving.
