Dough Preparation
Preheat the oven to 160 °C. Grease a springform pan (Ø 22 cm) with butter and lightly dust with flour.
Melt 200 g of the dark chocolate together with the butter in a bain-marie and then let it cool slightly. Set aside the remaining 200 g of chocolate for decoration.
Separate the eggs. Beat the egg whites with 200 g of sugar and a pinch of salt until stiff. Stir the egg yolks into the cooled, but still liquid, chocolate mixture.
Chef's tip
Perform a skewer test: If no dough sticks to a wooden skewer inserted into the center of the base, the base is done.
If you chill the base overnight in the refrigerator, it will be much easier to cut cleanly the next day.
For chocolate shavings, you can simply run a vegetable peeler along the edge of a bar of dark chocolate.
