Preheat the oven to 185 °C top/bottom heat. Line a muffin tin with 12–14 paper liners.

Finely mash the bananas. Add oil and both types of sugar (cane sugar and vanilla sugar) and mix briefly. Stir in eggs, buttermilk, and finally the flour mixed with baking soda and 25 g cocoa.

Distribute the batter into the liners (up to approx. 1 cm below the rim) and bake for 25–30 minutes. Test with a skewer. Then let cool completely.
Chef's tip
It's best to start with the caramel. It can easily be prepared a day in advance and stored in the refrigerator.
