Preparation method

Dough Preparation

Put flour and a pinch of salt into a bowl. Add 125 g of soft butter (not melted) and finally pour in the water. Knead the dough thoroughly until smooth, and let it rest in the refrigerator for about 30 minutes.

Apple & Caramel Preparation

Peel, core, and quarter the apples.

For the caramel, melt the remaining 100 g of butter in a pot or an oven-safe pan and gradually add the sugar. Heat, stirring constantly, until a golden-brown caramel forms (Caution: Do not let it get too dark, otherwise it will become bitter).

Chef's tip

Serve the Tarte Tatin classically with a dollop of crème fraîche or a scoop of vanilla ice cream.

Make sure to use a truly oven-safe pan if you caramelize and bake the apples directly in it.
