Line a bowl with cling film. Fill with vanilla ice cream (let it soften slightly if necessary, but don't let it melt). Cover with film and return to the freezer.

Preheat the oven to 180 °C. Grease the rim of a springform pan and line the bottom with baking paper.

Melt the dark chocolate in a bain-marie, stirring occasionally, then set aside.
Chef's tip
Make sure the meringue completely encloses the ice cream so it doesn't melt in the oven. A blowtorch can be used as an alternative to the oven for browning.
