Preparation method

Ingredients overview

  • 1050 g melon mix (watermelon & cantaloupe)
  • 120 g cucumber
  • 200 g feta cheese
  • 1 tbsp extra virgin olive oil
  • 25 ml lemon juice (juice of half a lemon)
  • 1 handful fresh mint
  • 1 pinch salt
  • 1 pinch freshly ground pepper

Deseed, peel, and cut 700 g watermelon and 350 g cantaloupe melon into bite-sized cubes. Peel the cucumber, halve it lengthwise, scoop out the seeds with a spoon, and slice the cucumber. Place everything into a large bowl.

Cut the feta into small cubes or crumble it roughly and add it to the melon and cucumber pieces in the bowl.

Add olive oil, lemon juice, salt, and pepper. Finely chop the mint leaves and mix them into the salad as well. Gently combine everything and ideally serve well chilled.
