- 350 g pork tenderloin
- 3 tbsp Char Siu sauce
- 1 tbsp oyster sauce
Marinate the pork tenderloin in a mixture of oyster sauce and 3 tablespoons of Char Siu sauce for at least 30 minutes, but preferably overnight in the refrigerator.
Preheat the oven to 190 °C. Bake the marinated meat on a wire rack (with a baking sheet underneath) for 20 minutes. Halfway through, turn the meat and cook for another 20 minutes until it has a beautiful dark glaze.
Baste the meat with another tablespoon of Char Siu sauce, turn off the oven, and let the meat rest in the turned-off oven for a few more minutes before slicing. Slice thinly and serve.
Chef's tip
Serve the sliced meat in a rich chicken broth with egg noodles and fresh spring onions for a classic Char Siu noodle soup.
