Preparation of the Date Caramel
Cover the dates with water and let them soak for 1 hour. Then remove the pit, place the dates in a food processor and blend. Add the cooking cream and 3 tablespoons of water and blend briefly until smooth.
Roasting Apples
Preheat the oven to 180 °C. Peel the apples, remove the core, and cut them into small cubes. Sprinkle with 1 teaspoon of ground cinnamon, mix well, spread on a baking sheet lined with parchment paper, and bake for 15 minutes.
Preparing the Cream and Layering
Crumble the whole grain biscuits. For the cream, stir together quark, yogurt, ricotta, and vanilla extract until smooth.
Chef's tip
For a more intense aroma, you can briefly toast the hazelnuts in a dry pan before chopping them.
