Preparation of the Panna Cotta

Put coconut milk with raw cane sugar and agar-agar into a pot and stir well.

Slit the vanilla pod lengthwise, scrape out the seeds, and add them along with the pod to the coconut milk. Bring the mixture to a boil. As soon as it boils, turn off the heat and let the vanilla infuse for about 20 minutes.

Stir in the juice of half a lime. Remove the vanilla pod and pour the liquid into prepared glasses. Chill until the mixture is firm.

Chef's tip

For a particularly intense aroma, you can also let the vanilla pod infuse in the coconut milk overnight (in the refrigerator).
