For the Dough

  • 70 g buckwheat flour
  • 110 g wholemeal spelt flour
  • 3 eggs
  • 500 ml low-fat milk
  • 1 pinch salt PL

For the Filling

  • 450 g apple
  • 2 tbsp unsalted butter
  • 1 tbsp honey
  • 2 tsp ground cinnamon 40g

Preparation

    Sift the buckwheat and wholemeal spelt flour into a large bowl. Add the eggs, milk, and a pinch of salt, then mix everything into a smooth batter. Let the batter rest for about 10 minutes.

    Meanwhile, prepare the apple filling: Wash the apples, remove the core, and cut them into small cubes. Heat 2 tablespoons of butter in a coated pan and sauté the apple cubes over medium heat for about 5 minutes. Remove the pan from the heat, stir in the honey and cinnamon, and mix everything well.

    Heat another coated pan without fat. From the rested batter, bake about 10 pancakes one after another over medium heat (about 1 minute per side).

    Fill the finished pancakes with the apple mixture, roll them up, and serve them warm.
Tip
For an extra touch of freshness, serve the pancakes with a dollop of natural yogurt or Skyr.
