Preparation method
Sift the buckwheat and whole spelt flour into a large bowl. Add the eggs, milk, and a pinch of salt, then whisk everything into a smooth batter. Let the batter rest for about 10 minutes.
Meanwhile, prepare the apple filling: Wash the apples, core them, and cut them into small cubes. Heat 2 tablespoons of butter in a non-stick pan and sauté the apple cubes over medium heat for about 5 minutes. Remove the pan from the heat, stir in the honey and cinnamon, and mix everything well.
Heat another non-stick pan without fat. From the rested batter, cook about 10 pancakes one after another over medium heat (about 1 minute per side).

For an extra touch of freshness, serve the pancakes with a dollop of natural yogurt or Skyr.
