For the Dough
- 70 g buckwheat flour
- 110 g wholemeal spelt flour
- 3 eggs
- 500 ml low-fat milk
- 1 pinch salt PL
For the Filling
- 450 g apple
- 2 tbsp unsalted butter
- 1 tbsp honey
- 2 tsp ground cinnamon 40g
Preparation
- 1Sift the buckwheat and wholemeal spelt flour into a large bowl. Add the eggs, milk, and a pinch of salt, then mix everything into a smooth batter. Let the batter rest for about 10 minutes.
- 2Meanwhile, prepare the apple filling: Wash the apples, remove the core, and cut them into small cubes. Heat 2 tablespoons of butter in a coated pan and sauté the apple cubes over medium heat for about 5 minutes. Remove the pan from the heat, stir in the honey and cinnamon, and mix everything well.
- 3Heat another coated pan without fat. From the rested batter, bake about 10 pancakes one after another over medium heat (about 1 minute per side).
- 4Fill the finished pancakes with the apple mixture, roll them up, and serve them warm.
Tip
For an extra touch of freshness, serve the pancakes with a dollop of natural yogurt or Skyr.
