Preparation method
First, put 50 ml of water into a small bowl, stir in the gelatin powder, and let it swell.
Meanwhile, peel the mangoes and remove the pit. Puree the fruit flesh with 100 ml of water in a blender until smooth. Pour the mango mixture into a pot, add coconut milk and honey, and bring everything to a boil over medium heat.
Once the mixture boils, reduce the heat. Add the swollen gelatin with its water and gently heat for 1–2 minutes, stirring constantly, until the gelatin has completely dissolved. Do not let it boil vigorously!
Chef's tip
For a vegan version, you can replace the gelatin with agar-agar (follow package instructions) and swap the honey for agave syrup.
