Pour about 150 ml of the soy drink into a bowl and stir until smooth with the egg yolks, vanilla extract, honey, and potato starch, until no lumps remain.

Pour the remaining soy drink into a small saucepan and bring to a boil over medium heat.

Once the soy drink boils, pour in the prepared mixture, stirring constantly. Continue stirring until the mixture thickens significantly and reaches a creamy pudding consistency. Remove the pot from the heat.

Chef's tip

Leftover crunchy oats also taste excellent as a topping for yogurt or smoothie bowls.
