Preparation method

Rinse the mint leaves thoroughly under running water, drain well in a sieve, and pat dry.

Place water, sugar, and mint leaves in a pot. Heat the mixture over medium heat, stirring until the sugar has completely dissolved.

Let the syrup simmer gently for about 2 minutes. Then transfer to a bowl, cover with cling film, and let it steep in the refrigerator for several hours (preferably overnight) until the liquid is completely chilled.

Chef's tip

For a particularly creamy consistency, stir the sorbet vigorously with a fork every 30 minutes during freezing to break up large ice crystals. This process takes approximately 3 hours in total.
