Preparation method
Thoroughly wash the mint leaves under running water, drain in a sieve, and pat dry.
Place water, sugar, and mint leaves in a pot. Heat the mixture over medium heat, stirring, until the sugar has completely dissolved.
Simmer the syrup for about 2 minutes. Then transfer to a bowl, cover with cling film, and let it steep in the refrigerator for several hours (preferably overnight) until the liquid is completely cooled and flavored.
Chef's tip
To achieve a particularly creamy consistency, stir the sorbet vigorously with a fork every 30 minutes during freezing to break up the ice crystals. This process takes about 3 to 4 hours. Alternatively, you can freeze the mixture in an ice cream maker.
