Preparation of the Panna Cotta

Put coconut milk with cane sugar and agar-agar into a pot and stir well.

Cut the vanilla pod lengthwise, scrape out the seeds, and add them along with the pod to the coconut milk. Bring the mixture to a boil. Once it boils, turn off the heat and let the vanilla infuse for 20 minutes.

Stir in the juice of half a lime. After infusing, remove the vanilla pod and pour the liquid into prepared glasses. Let it set in the refrigerator.
