  • 125 ml Prosecco
  • 100 g fresh strawberries
  • 1 tsp refined sugar

Preparation

    Wash and hull the fresh strawberries, then purée them very finely together with the sugar in a blender or with an immersion blender. For an especially smooth result, the purée can then be strained through a sieve.

    Pour the strawberry purée into a champagne glass or a shaker with ice. Carefully top with the well-chilled Prosecco.

    Stir very gently with a bar spoon to preserve the carbonation, and serve immediately. Garnish with a strawberry slice on the rim of the glass, if desired.
Tip
Ensure that both the strawberry purée and the Prosecco are very well chilled before mixing the cocktail. This way, the Rossini tastes most refreshing.
