Dissolve the dry yeast in the lukewarm milk. Add eggs and sugar and whisk everything well.

Sift flour, cinnamon, and lemon zest into a bowl. Slowly stir in the milk mixture until a smooth dough forms. Finally, stir in the melted butter. Let the dough rise in a warm place for at least one hour.

Preheat the waffle iron and lightly grease it with some butter or oil.

Chef's tip

For particularly crispy waffles, you can keep the finished waffles warm in the oven at 100°C while you bake the rest.
