Finely crumble the cocoa biscuits. This works best in a food processor or by placing the biscuits in a freezer bag and rolling over them with a rolling pin.

Combine the biscuit crumbs in a bowl with the lactose-free cream cheese, the zest and a little juice from the organic lemon. Add icing sugar to taste and mix everything with a fork to form a homogeneous, pliable mass.

Wrap the mixture in cling film and let it rest in the refrigerator for at least 30 minutes to firm up.

Chef's tip

The balls taste best fresh, but will keep in the refrigerator for up to 24 hours.

For an extra chocolatey note, you can roll the balls in baking cocoa instead of coconut.
