- 900 g Cured pork shoulder or Prague ham
- 100 ml Pineapple juice
- 1 Orange
- 3 tbsp Maple syrup
- 1 tsp Ground ginger
- 1 tsp Ground star anise
- 1 Handful whole cloves
Preheat the oven to 170 degrees top/bottom heat. Score the rind of the ham crosswise about half a centimeter deep to create a diamond pattern. Insert a clove into each resulting square.
Slice one half of the orange, and squeeze the juice from the other half. Mix the pineapple juice with the freshly squeezed orange juice, maple syrup, ground ginger, and star anise to form a marinade.
Line a baking dish with baking paper and arrange the orange slices in it. Place the roast on the orange slices and pour the prepared marinade over it. Cook the roast in the oven for about 1 hour, basting it with the marinade from the dish every 15 minutes.
Chef's tip
Roasted potatoes or a freshly baked baguette are excellent side dishes.
