Preparation method

Preheat the oven to 175–180 °C top/bottom heat and line a baking sheet with parchment paper.

Peel the banana, place it in a large bowl, and mash it finely with a fork. Chop the dark chocolate into small pieces and add it to the banana.

Add oats, egg, honey, cinnamon, baking soda, vanilla extract, cornstarch, and a pinch of salt. Mix everything thoroughly to form a uniform dough.

Chef's tip

It's best to use very ripe bananas with brown spots – they are sweeter and easier to mash.

The cookies will stay fresh in an airtight container for about 3-4 days.
