Preparation & Browning the Meat
Mix the ground pork with 1 tablespoon of soy sauce (the remaining 3 tablespoons will be used later for the sauce). Lightly salt the meat, mix well, and let it marinate for about 10 minutes.
Meanwhile, finely chop the garlic, ginger, and chili pepper. Slice the spring onions into fine rings, separating the white and green parts.
In a wok or large pan, heat the vegetable oil strongly. Briefly sauté the garlic, ginger, chili, and the white part of the spring onions until fragrant. Add the ground meat and brown it, stirring constantly, until it is crumbly and fully cooked through.
Chef's tip
For an extra crispy touch, you can also sprinkle roasted peanuts over the finished dish.
