Dieser cremige Aufstrich aus geröstetem Hokkaido-Kürbis und würzigem Feta ist das perfekte Highlight für jede Brotzeit. Die Kombination aus süßem Kürbis, salzigem Käse und knackigen Walnüssen, abgerundet mit einem Hauch Honig, sorgt für ein unvergleichliches Geschmackserlebnis. Ideal als Vorspeise oder gesunder Snack für zwischendurch.

Preparation method

Halve the pumpkin, remove the seeds, and cut the flesh with the skin into coarse cubes. Preheat the oven to 180 °C top/bottom heat.

Place the feta block in the center of a baking sheet. Distribute the pumpkin cubes around it. Add thyme sprigs, unpeeled garlic cloves, and half a lemon (optional for more freshness). Drizzle everything with olive oil, season with salt and pepper. Cover the baking sheet with parchment paper and bake for approx. 45 minutes until the pumpkin is soft.

Remove the baking sheet from the oven. Remove the thyme sprigs and squeeze the garlic out of its skin. Transfer the entire contents of the baking sheet (including any juices) to a blender. Add a little lemon juice to taste and blend everything into a smooth cream.

Chef's tip

The spread tastes excellent both warm and cold. It keeps in the refrigerator for approx. 3-4 days.
