Preheat the oven to 180 °C top/bottom heat. Line a baking sheet with baking paper.

Beat the soft butter with the sugar until creamy for at least 5 minutes. Then beat in the eggs one by one – incorporate each egg completely before adding the next.

Mix the buttermilk with the red food coloring. Weigh and finely sift the flour and cocoa.
Chef's tip
For a particularly fine result, you can process the dough in a chopper into very fine crumbs – this looks especially elegant in the glass.
