If using leftover pasta, bring it to room temperature. If preparing fresh pasta, cook it al dente according to package directions, then let it cool.

In a large bowl, whisk the eggs with the grated Parmesan. Add the diced mozzarella, ham (if using), and finely chopped onion. Fold the cooked pasta into the egg mixture and mix well until the ingredients are evenly distributed. Season with salt and pepper.

Frying & Serving

In a medium non-stick pan, heat the olive oil over medium heat. Add the pasta-egg mixture to the pan and spread evenly. Fry the frittata for about 5–7 minutes until the bottom is golden brown and the top begins to set.
