Ingredients

  • 200 g dates
  • 100 g cashew nuts
  • 1 tbsp baking cocoa

  • 1 piece cling film

Preparation

    Place the dates in a bowl, cover with water, and let them soak overnight (or for at least 2 hours) to soften. Then drain the water, cut the dates into coarse pieces, and finely puree them in a blender.

    Add the cashew nuts and baking cocoa to the date paste and mix everything briefly again until a homogeneous, slightly lumpy mixture forms.

    Press the mixture firmly into a bar mold. If no mold is available, line a small loaf pan with baking paper, fill it with the mixture, and press it down firmly with your hands or a spoon so that no gaps remain.

    Let the mixture set in the refrigerator for at least 1 hour. Then remove the mixture and cut it into 6 equally sized bars. Wrap the bars individually in baking paper or cling film to prevent them from drying out.
Tip
For an extra crunchy touch, you can fold in a few coarsely chopped cashew nuts at the end.
The bars will keep in an airtight container in the refrigerator for up to two weeks.
