- 200 g smoked tofu
- 300 g carrots
- 4 eggs
- 60 g spelt flour Type 630
- 1 tsp dried basil
- 1 tsp curry powder
- 2 tbsp extra virgin olive oil
- 1 pinch salt
- 1 pinch ground black pepper

Coarsely grate the smoked tofu and peeled carrots and place them in a bowl. Add eggs, spelt flour, dried basil, curry powder, and a pinch of salt and pepper. Mix everything well until a smooth batter forms.

Heat the olive oil in a large pan. Using a spoon or a small ladle, place small portions of the batter directly into the pan and flatten them (approx. 4 fritters at a time). Fry over medium heat for 2–4 minutes per side until golden brown. The batter is enough for about 16 fritters.

Arrange the finished fritters on plates and serve. They taste best with a dollop of natural yogurt and a fresh salad.
