Preheat the oven to 200 – 205 °C. Prepare a baking sheet (approx. 30 cm × 40 cm) and line it with baking paper.

Separate the eggs: Place the egg yolks in a bowl and the egg whites in a tall mixing bowl. In a large bowl, mix the shredded coconut, potato starch, baking cocoa, and baking powder.

Add the egg yolks and 20 g of honey to the cocoa mixture and whisk everything thoroughly. Beat the egg whites with a pinch of salt until stiff (approx. 3 minutes). Carefully fold the beaten egg whites into the cocoa mixture.
Chef's tip
For a particularly fine touch, you can add a pinch of real vanilla to the quark filling.
