Preparation method

Preheat the oven to 220–225 °C and prepare a medium-sized baking dish (approx. 30 cm x 25 cm).

Cut the breakfast bacon into small cubes and place them in the baking dish. In the preheated oven at 220–225 °C, render lightly for about 10 minutes until crispy.

Meanwhile, divide the cauliflower into small florets. Crumble the Balkan cheese and cut the mozzarella into small cubes.

Chef's tip

For a vegetarian option, simply omit the bacon and add some toasted pine nuts instead.
