Preparation method
Place the sugar in a small pan or a stainless steel ladle. Heat it over medium heat until it melts into liquid, amber-colored caramel. Stir constantly to prevent burning.
Once the sugar is completely melted, remove it from the heat. Add a pinch of baking soda and stir quickly. The mixture will start to foam and become lighter.
Immediately pour the mixture onto parchment paper or a silicone mat. Gently press it flat with the bottom of a glass or a metal plate.
Chef's tip
Use a stainless steel ladle for the most authentic preparation and easier cleaning.
Clean the used utensils immediately with hot water to easily dissolve the hard caramel.
