Preheat the oven to 180 °C top/bottom heat. Line a baking sheet with baking paper.

Beat the soft butter with the sugar until creamy for at least 5 minutes. Then stir in the eggs one by one – fully incorporate each egg before adding the next.

Mix the buttermilk with the red food coloring. In a separate bowl, weigh and sift the flour and cocoa.
Chef's tip
For a particularly refined look, pipe the cream into the glasses using a star nozzle.
The dessert tastes best if it has chilled in the refrigerator for at least 1 hour before serving.
