Ingredients - Chocolate Cake
- 4 eggs
- 150g sugar
- 140g dark couverture chocolate
- 120g butter
- 50g flour
- 30g powdered sugar

- 1L red wine
- 500ml port wine
- 200g sugar
- 1 vanilla pod
- 3 cinnamon sticks
- 2 ripe pears
- 2 tbsp starch
- Vanilla ice cream
Preparation - Chocolate Cake
- 1Beat the eggs vigorously with the sugar until a white, frothy mixture forms. Melt the couverture with the butter and add it to the egg mixture, stirring well. Then carefully fold in the flour.
- 2Then fill the mixture into large muffin molds and bake in the oven at 190 °C for about 8 minutes.
Preparation - Red Wine Pear
- 1Caramelize the sugar in a pot, deglaze with red wine and port wine, and reduce with the spices by 1/3.
- 2Peel, core, and cut the pears into wedges. Place the pears in the liquid and simmer until tender over low heat.
- 3Then add the starch mixed with water to thicken the liquid and create a nice glaze. Let the pears cool in the liquid afterward, this will intensify the color of the pears.
Finishing
- 1Arrange the pears decoratively on the plate, sprinkle the chocolate cake with its molten core with a little powdered sugar and place it in the center. Scoop the vanilla ice cream into a nice ball with an ice cream scoop or a spoon and place it next to it.
