Ingredients
- 100 g bulgur
- 1 pc. Hass avocado, ripe
- 100 g pre-cooked beetroot
- 150 g cucumber
- 60 g cherry tomatoes
- 40 g lamb's lettuce
- 60 g feta cheese
- 100 g hummus (beetroot)
- 30 g walnuts
Preparation
- 1Prepare the bulgur according to package instructions and let it cool.
- 2Halve the avocado, remove the pit, scoop out the flesh with a spoon, and cut it into cubes.
- 3Cut the pre-cooked beetroot and cucumber into fine cubes. Quarter the cherry tomatoes.
- 4Distribute the bulgur into bowls and arrange the lamb's lettuce on top. Add the prepared vegetables and avocado. Crumble the feta cheese over it and add a generous dollop of beetroot hummus. Roughly chop the walnuts and garnish the salad with them. Enjoy your meal!
Tip
For an even more intense aroma, you can briefly toast the walnuts in a dry pan.
