Ingredients
- All 7 herbs for Green Sauce (parsley, chives, sorrel, borage, chervil, salad burnet & cress)
- 250 g sour cream or crème fraîche
- 150 g yogurt
- 1 tbsp vinegar
- 2 tbsp oil
- 1 tsp mustard
- 1 dash lemon juice
- 4 hard-boiled eggs
- 1 kg waxy potatoes, peeled
- Salt
- Pepper
Preparation
- 1Thoroughly wash all herbs and drain well. Then finely chop everything.
- 2Mix sour cream, yogurt, mustard, vinegar & oil. Chop the hard-boiled eggs and fold them in. Season with salt, pepper & lemon juice. Let it steep in the refrigerator for at least one hour.
- 3Stir well again before serving.
- 4Serve with boiled potatoes and quartered hard-boiled eggs.
