Ein frisches, leichtes und unglaublich schnelles Zucchini-Carpaccio mit Pinienkernen, Basilikumpesto und Grana Padano-Hobeln. Die perfekte Sommervorspeise oder ein leichtes Abendessen.

Preparation method

Wash the zucchini, cut off the stem, and slice into very thin slices, preferably using a mandoline.

For the dressing, mix all the ingredients together and whisk lightly with a fork until a smooth and thick dressing forms.

Toast the pine nuts in a hot pan without oil until golden brown. This only takes a few minutes.
