Ingredients
- 4 peaches
- 200g arugula
- 2 balls mozzarella
- 30g walnuts
- 6 tbsp olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp honey
- 1 lime
- Salt
- Pepper
Preparation
- 1Wash and drain the arugula. Drain the mozzarella. Wash the peaches, halve them, and remove the pits.
- 2Lightly toast the walnuts in a pan without oil. Place the peaches on the grill or prepare them in a grill pan on the stove. They are ready once they are slightly soft and have nice grill marks.
- 3For the dressing, whisk olive oil, balsamic vinegar, and honey in a bowl. Squeeze the lime with a citrus press and add the juice to the dressing. Stir everything and season again with salt and pepper.
- 4Arrange arugula, grilled peaches, and walnuts on a large plate or in a salad bowl. Tear the mozzarella and add it to the salad. Drizzle with the dressing or serve it on the side so everyone can determine the amount of dressing themselves.
